Sweet Potato Brownies


Alright, are you ready for this healthy recipe?!!! You are going to think I'm crazy, but I promise you, you wont be able to tell the difference from the REAL thing from... Sweet Potato Brownies!



Now honestly, before you go off thinking I'm nuts, I have told you that with the holiday's coming up I am determined not to get the same old "Meagan, it's a family get together, can't you just give up this healthy eating just for once?!" Sorry Grandma, it's not happening!! I have worked too hard and come too far to get to where I am today and I know that if I indulge, I may go back to old habits! Now maybe you have more willpower than I do, but if I can bring several dishes that no one will know that they are healthy, I can focus my eating on those particular dishes without anyone questioning a thing except, where can they get a copy of that DELICIOUS brownie recipe!!  hehe :) 

INGREDIENTS
    Cake
  • 1 ripe avocado
  • 1 cup sweet potato puree*
  • ½ cup unsweetened applesauce
  • ¼ cup date paste
  • 1 tsp pure vanilla extract
  • 2 eggs
  • ½ cup spelt flour
  • ½ cup cocoa powder
  • ½ tsp sea salt
  • 1 tsp baking soda
  • ½ cup walnuts
  • Icing
  • ¼ cup date paste
  • ¼ cup hazelnut butter
  • ½ cup fat free plain Greek Yogurt
  • ¼ cup cocoa powder
  • 1 tbsp coconut oil, melted
  • 3 scoops vanilla flavored Whey Protein powder

Preheat your oven to 375F. Spray a 9” square baking pan with cooking spray and line pan with parchment paper, leaving enough extra to extend over the sides
.INSTRUCTIONS
  1. In the bowl of your food processor, combine avocado, sweet potato puree, unsweetened applesauce, date paste, vanilla and eggs and process until smooth and creamy.
  2. In a large mixing bowl, mix together with a whisk the flour, cocoa powder, salt and baking soda.
  3. Add sweet potato mixture and mix with a rubber spatula until well combined.
  4. Fold in walnuts and transfer to your prepared pan. Spread batter evenly and bake for approximately 25 minutes, or until a toothpick inserted in the center of the cake comes out almost clean.
  5. Set brownies on a wire rack to cool for 15-20 minutes.
  6. While brownies are cooling, prepare the icing by adding all the ingredients to the bowl of your food processor and process until smooth and creamy.
  7. Pour over warm brownies and spread evenly with a spatula.
  8. Leave the brownies on the wire rack until they reach room temperature then transfer to the fridge until completely cool. Cut into 12 squares.
Notes
*To make the sweet potato puree, cut one large sweet potato in half, place it in a baking sheet, add a little bit of water in the bottom, cover with foil and roast it in a 375F oven for about 35 minutes or until soft. Allow to cool completely, remove peel and puree.

Shakeology Frozen Fudgy Oat Bars



The classic flavors of chocolate and peanut butter meld together in this brownie-like treat.

Total Time: 1 hr., 10 min.
Prep Time: 10 min.
Yield: 4 bars
Ingredients:
• 1 scoop Chocolate Shakeology
• 1 scoop Beachbody Whey Protein Powder
• ½ cup natural peanut butter
• ½ banana
• ½ cup rolled oats

Preparation:
1. Mix all ingredients together.
2. Freeze for at least 90 minutes in an 8" x 8" pan.
4. Remove from freezer, cut into 4 squares.

One Minute Pancake

Everyone keeps asking me for some more microwave recipes... Here is one I tried this morning as my pans were dirty and I was in no mood to do dishes straight out of bed!!! So I popped this sucker in the microwave and it worked!!

One Minute Pancake (Gluten Free)






Ingredients:

 (= 1 serving = 5 little pancakes):
- 1 banana
- 1 egg
- cinnamon

Directions:



- Mix all ingredients

- heat up a pan (or pop in the microwave)
- make 5 pancakes
- bake each side a few minutes

Healthified BLT Burger




Honestly, who said a BLT had to be unhealthy?! 





Though you might be tempted to try to save money by buying 93% lean ground beef instead of 96% lean, don't. Though they don't sound very different, 93% lean has almost twice the fat of 96%. One four-ounce serving of 93% lean has about 180 calories and 8 grams of fat. The 96% lean has 150 calories and only 4 grams of fat.

  • 4 strips extra-lean turkey bacon, each cut in half
  • 1 pound 96% lean ground beef
  • 4 whole grain or whole wheat hamburger buns, split
  • 1 cup chopped fresh spinach leaves
  • 4 large or 8 to 12 small thin tomato slices
  • 4 tablespoons low-fat mayonnaise

Preheat a grill to high heat.
Place a medium nonstick skillet over medium-high heat and add the bacon strips. Cook for 2 to 3 minutes per side, or until crisp. Remove from pan and cover to keep warm.
Divide the beef into 4 equal portions and shape into balls, packing them tightly as you do. Press each into a patty that is about 1Ú2" larger than the diameter of the buns.
Grill the burgers for about 2 minutes per side for medium rare, or until desired doneness (do not smash the burgers with a spatula). Place the bun halves, cut sides down, away from direct flame on the grill until toasted, about 20 seconds.
Place each toasted bun bottom on a plate. Top with the spinach, tomato, patties, then 2 pieces of bacon each. Spread 1 tablespoon mayonnaise evenly on each bun top, flip atop the patties, and serve.

Indian Chicken Salad Pocket

I know what is for lunch today!!!!! This is an Indian Chicken salad Pocket. Just the way the low-fat mayonnaise is mixed with the stronger flavors to give it the richness of full-fat mayo is amazing!!! I coupled low-fat mayo with curry paste (you can find in the international aisle in most major grocery stores). You don't want to go crazy with these pastes in other dishes if you decide you like it, 1/2 tsp will do it for you!!






  • Ingredients:

  • 1-1/2 tablespoons low-fat mayonnaise
  • 1/2 teaspoon curry paste
  • 1 teaspoon lime juice
  • 3/4 cup (4 ounces) chopped grilled chicken breast
  • 1-1/2 tablespoons seeded, chopped cucumber
  • 1-1/2 tablespoons chopped red onion
  • 1 whole wheat pita (6-1/2" diameter), cut in half
  • 2 leaves green leaf lettuce




Directions: 

In a medium bowl, combine the mayonnaise, curry paste and lime juice. Whisk to blend. Add the chicken, cucumber and onion. Mix well. Spoon the mixture evenly into the pita halves. Add the lettuce.

P90X Round 2!

As many of you know, I have started a second round of P90X. It is crazy of how far I have come since the last round last January. Last year when I first started this (overweight mind you), I couldn't do more than 5 standard pushups let alone even complete other pushups such as military and diamond.... We wont even touch base on the dive bomber pushups!!! It took 45 days for me to even build enough strength to do the workout without modifying every move! I still couldn't do a whole lot of pushups even at that point. Now a little over 9 months later, I had restarted P90X. I am able to do 30 pushups easily in all areas. I have done Insanity, Brazil Butt Lift, TurboFire and a few programs over the summer that I tossed in when I could, and now 70lbs lighter, I am back at my second round of P90X. It has been a long process, but it has become a lifestyle. I have talked to many people who are scared to start a program because they don't think they have the endurance or strength to push through. It's a mindset. I am able to do 30 plus pushups and am only getting stronger now.

The one thing that I can promise is that the challenge groups I run is what helped me start this whole journey. Most think "What can this honestly do to help me?" It has been proven when you surround yourself with like-minded people working towards the same goal, you will keep pushing through. When you have the support and tools to succeed and a coach to help answer your questions and keep you motivated, you can do what you think is the impossible. Am I an expert? No. I worked at a gym for 4 years thinking I knew everything; I didn't. I had no idea what to do with the equipment that was offered to me free of use! After having 3 kids and being a stay at home, I thought it was easy to pop in a program and workout at home. Thing is, nutrition plays a huge role in the weight loss department. It's confusing and frustrating. When I started P90X last year, the only way I got through it was doing a Challenge group to push myself with others and had all the tools available to me on what I was really supposed to be doing.

When I have people come to me saying it's too expensive, it really boggles my mind. How is it expensive? You get the program of your choice, the Shakeology and a club membership to Team Beachbody where you can schedule your workouts and have meal plans created to tailor your needs!! How much would you spend if you were going to go to a gym, pay for a membership, a personal trainer to tell you what to do and a nutritional specialist to create your meals for you?! A lot!! If you didn't go with a personal trainer and a nutritional specialist, you still just paid for a gym membership with a lot of options of equipment, but if you don't know how to use it properly and create a game plan to see results, you aren't going to get very far. The other route is to study and research what to do at the gym, but that's time consuming. If you want to do something now and achieve your goals, this is the best deal for you! Shakeology is something I drink daily. Why? It's the healthiest meal of the day (look at the ingredients), it curves my cravings for sweets and has helped me lose a ton of weight alone!! It comes out to $3 a day (I can help you get the 25% discount) and in all reality, I was paying more for my coffee that I was addicted to and medications I was on in the past for kidney infections and my breakfast alone in the past costed more than $3! I did go on Shakeology at first knowing there was the bottom of the bag guarantee where I could get my money back, but after being on it for months now, I will never consider going off. I hate veggies and this makes the process so much easier because I am getting it in Shakeology! With that being said, the lowest Challenge Pack is $160, look what all you get with that?!

Now back to the programs. When I started last year, I thought I would give it my all for 90 days and if I could reach my goal weight, I would quit and go back to eating whatever I wanted. Obviously that didn't happen because it was a snowball effect on my results and I couldn't stop! I just kept losing more weight and toning in areas that I thought were impossible. Seriously, I had 3 kids!! I never thought I could have the stomach that I have now! I never even thought it was possible to have this stomach in high school! The depression has subsided and I can now run around with my kids and for once be happy with who I am. Isn't that what we all want?!

Again, I'm not an expert and not a personal trainer. All I know is what has worked for me and my progress that I have made with these programs. There are many coaches out there that just want to say they are coaching someone. Not me. I could care less if you buy a program from me. I just want to help you achieve your results and be there as a friend and encourage you every step of the way. I want to make sure whatever workout program you have is not going to end up on the shelf and sit there collecting dust. It's no fun sitting there every day wishing that some magical pill will land in your hands and change your life. If I can do this, so can you! I never thought I could do 30 pushups. I never thought in all honesty I could do 2! If you want my help, you have to let me know so I can talk to you and come up with a solution to get you on the right track.

Tips:
- add some fruits like raspberries (see pic above) or some pineapple
- add 25- 35g of coconut oil to the bottom to give it a more firm bottom and to add some extra healthy fats (mct's)

Ingrediƫnts (6 large servings):
- 750 g white yogurt chees / Quark cheese (low fat)
- 120 g All Bran plus
- 50 g nuts (I prefer hazel nuts)
- 10 g of gelatin leaves
- stevia (sweetner)

Directions:
- take a spring for cake form
- cut a piece of baking paper as the size of your spring form
- put the baking paper on the bottom, you can spray a little bit of cooking spray at the bottom so you baking paper will stick to it
- put the all bran plus and nuts in the bleder and blend it in to little pieces
- put the blended mass in the springform cake, distribute and push it down on the bottom so it is solid

-take a little bit of water (room temperature) and put in the gelatin leaves for +- 5minutes (softening it)
- boil some water (+- 150 g ml of water)
- when the water boiles take of the fire
- take the softened gelatin leaves, squeeze out the water
- add the gelatin leaves to the boiled water and stir

- take a large bowl
-put in the white yogurt cheese or quark cheese (low fat), add some sweetner (like stevia) and the water with the dissolved gelatin leaves
- mix it al together

- distribute the filling on to the bottom
- put in the refrigerator for at least two hours

- take of the springform cake and divide in 6 pieces
